Surprised to see us selling vermouth? Don’t be. Vermouth can be just as place-expressive as wine when approached with the same ethos. For one thing, it offers a somewhat more straightforward terroir experience, a chance to taste the countryside by way of the herbs, barks, and flowers growing there. 


And, Winestillery is very much doing things with an ethos we love, drawing on Tuscany’s centuries-long vermouth-making history. Their mission: “rooting in our land to create with our own hands products that enclose our terroir in all its nuances.” Their dry vermouth is a trebbiano base of both ripe and late-harvest grapes, infused with traditional Tuscan botanicals. No caramel is added, and no chill-filtration is utilized. On the nose, a cascade of sunshine, with poached pear, tangelo, meyer lemon zest, and acacia honey. On the palate, a kiss of grapefruit-adjacent bitterness, softened with more honey, and a long finish. Charming and singular.
