NV Champagne Amaury Beaufort, Rose de Saignee XXII, Champagne, France

Amaury Beaufort grew up among the vines and barrels of Champagne, following in the footsteps of his father—one of the region’s early pioneers of organic viticulture. Those formative years instilled a philosophy that guides him today: deep respect for the land, full autonomy in the cellar, and a reverence for natural balance.

Amaury farms just one hectare of vines in the Aube—his “Jardinot”—which he tends entirely by hand. The site has been untouched by agricultural chemicals since 1969, and he treats it as both vineyard and garden, where the natural world is invited to coexist with the vines. Grapes are picked fully ripe, gently pressed, and fermented with native yeasts in 15 hL oak casks, followed by a long élevage and disgorgement brut nature.

Rosé de Saignée XXII is from a 2022 base wine, made entirely of pinot noir from Polisy, grown on Kimmeridgian limestone. The wine is drawn off in the saignée method and aged for 24 months on the lees.

Delicate red strawberries and red plum and raspberries, stones, fine brioche, lightly toasted almonds, all in that gorgeous sappy quality that the.saignée method imparts—bright, expressive, and deeply satisfying.
