For Thomas Bouley, the vineyard tells the story. His philosophy centers on creating a thriving ecosystem—soils full of life, vines that grow with intention, and fruit that speaks clearly of its origins. A ninth-generation steward of this 8.5-hectare estate, Thomas’s work is marked by patience and an uncompromising focus on balance, both in the vineyard and the glass. He farms 29 plots across Volnay, Pommard, Beaune, and Meursault using biodynamic principles with no green-harvesting, no chemical fertilizers, and minimal intervention in the cellar.

This 0.25-hectare parcel was planted in 1996 and 2001. 2023 shows notes of bright citrus, white peach, apple blossom, and a chalky mineral finish. It's lean and lifted, with bright acidity that makes it perfect for oysters, goat cheese, or simply drinking on a warm afternoon. Bouley's aligoté has more texture and depth than most, a glimpse at what this grape can do when grown and handled with care. Drinking beautifully now and will continue to gain nuance over the next 2-3 years.
