Chanterêves is the micro-négociant project based in the Hautes Côtes of husband-wife team Tomoko Kuriyama and Guillaume Bott. Both trained in oenology—Tomoko in Germany, Guillaume in Burgundy—and met during harvest at Simon Bize, where Guillaume is still cellar master. Their shared love of purity and restraint in wine led naturally to a partnership. “We both like purity and elegance,” says Tomoko. “We don’t like massive wines.” They make wine by infusion, not extraction, letting the fruit steep gently in its own juice, more like tea than soup. The results are delicate, subtle, and quietly expressive. As The Feiring Line put it, wines of infusion “wash over you like a breeze instead of a heat blast.”
“Les Blanches Fleurs” is a premier cru vineyard in Beaune, just south of Clos du Roi, where marl and limestone soils meet a warm, south-facing exposure. Often considered a lighter cru, it shows pinot noir with surprising depth and nuance when handled with care—something Chanterêves has in spades. Fermented with 100% whole clusters and aged over two winters in used oak and stainless steel, this is pinot noir at once lifted and layered.
Fragrant and fine, the nose leads with a bouquet of red berries, wild roses, and crushed herbs. The palate is supple and bright, carried by silky tannins and a mineral thread that gives shape to the wine’s airy charm. Floral, detailed, and quietly persistent—this is “Blanches Fleurs” with real intention.
