Terroir al Límit is one of the most compelling projects to emerge from Priorat in the past two decades. Founded in 2001 by Dominik Huber and South African winemaker Eben Sadie, the estate helped pioneer a gentler, more transparent vision for the region. From the beginning, the focus has been on farming by hand, following organic and biodynamic principles, and crafting wines that speak clearly of where they come from. In the cellar, whole-cluster fermentation, ambient yeasts, and aging in concrete or neutral foudres replace extraction and oak. Today, the wines are guided by Tatjana Peceric, whose thoughtful, intuitive style brings even more clarity and finesse to each cuvée.
The range has since expanded to include Terroir Sense Fronteres, a sister project across the DO border in Montsant. Here, Dominik and Tatjana explore the enormous potential of this overlooked region through old-vine garnacha grown high in the Montsant mountains. These wines are harvested early, fermented whole cluster, and aged entirely without oak to preserve freshness and finesse. Whether in Montsant or Priorat, the throughline is clear: a commitment to expression over intervention, and a belief that Mediterranean wines can be as graceful and terroir-driven as any in the world. Brisat is the Catalan word for skin-contact white, and this bottling is a graceful and grounded expression of the style. Sourced from organically farmed garnatxa blanca vines on sandy clay soils in the Montsant valley, the fruit is split at harvest: half sees a short maceration on the skins, the other half is pressed directly to tank. Fermented with native yeast and aged for six months in stainless steel, the wine is bottled without filtration or fuss.
Fresh and aromatic, Brisat opens with notes of fennel, citrus peel, and white flowers, followed by a subtle smokiness and a mineral thread that runs from start to finish. There’s a gentle grip from the skin contact, just enough to add texture without weight. This is a white that’s full of character, light on its feet, and unmistakably rooted in Montsant. It’s built for the table, whether the flavors lean coastal, herbal, or sun-drenched.
