We come together around the idea of saying “yes”: A small word that contains everything.

Romain Henin has lived and breathed Champagne since before he could speak. Growing up among the vineyards of Champagne, he is the latest in a long line of vignerons. After graduating from Avize and refining his skills at Henry Giraud, a chance encounter with Patrick Bouju and Jason Ligas lit his torch for organic and biodynamic farming. Romain is energized by the vision of revitalizing his ecosystem and likes to run little experiments to test how “vivant” his land is, such as burying his boxer shorts in his vineyard to see how quickly the microorganisms in the soil break down the cotton.

Korrigans is Romain’s adventure with his brother Thomas into the world of apples.  Together, they explore a new landscape with the same passion and curiosity as they have for Champagne: the orchards of Normandy. The apples are hand-harvested and pressed at the source, but true to their roots, the juice returns to their cellar in Champagne to ferment and mature. This bottling, nicknamed “Apple Brothers,” blends five types of organic apples and is bottled without dosage. In Romain’s own words, it is “a cider of energy and tension…that you won’t forget.”
