Elise Bougy is part of a new wave of Champagne growers rethinking the region from the ground up. After returning to her native Les Mesneux in 2016 to take over her family’s estate, she transitioned the vineyards to organic and biodynamic farming, earning certification in 2022. Her three hectares span 1er Cru parcels in the Montagne de Reims and a prized Grand Cru plot in Le Mesnil-sur-Oger, including a cherished family holding on pure chalk soils. With minimal intervention in the cellar and a fierce devotion to site expression, Bougy crafts Champagnes that are vibrant, tense, and resolutely alive.
From a revered Grand Cru parcel in Le Mesnil-sur-Oger, just across the road from Pierre Péters’s Les Chétillons, Chétillon de Haut is a chardonnay study in clarity and quiet power. The vineyard, once held by Elise’s grandmother, sits on pure, iodized chalk and colluvial limestone, a terroir that imparts unmistakable tension and mineral drive. Fermented spontaneously and aged 10 months in a combination of 600L demi-muids and stainless steel, the wine was bottled without fining, filtration, or dosage, and underwent extended lees aging before disgorgement in early 2023.
This is a blanc de blancs that floats in the glass with an airy, yet precise, mouthfeel and saline lift. Beneath the surface, there’s a quiet structure and savory chalky depth that give the wine its unmistakable Grand Cru resonance.
