Elise Bougy is part of a new wave of Champagne growers rethinking the region from the ground up. After returning to her native Les Mesneux in 2016 to take over her family's estate, she transitioned the vineyards to organic and biodynamic farming, earning certification in 2022. Her three hectares span 1er Cru parcels in the Montagne de Reims and a prized Grand Cru plot in Le Mesnil-sur-Oger, including a cherished family holding on pure chalk soils. With minimal intervention in the cellar and a fierce devotion to site expression, Bougy crafts Champagnes that are vibrant, tense, and resolutely alive.

Les Coullemets is a single-parcel Blanc de Blancs from a small, low-yielding lieu-dit at the bottom of Le Mesnil-sur-Oger. The plot belonged to Bougy's grandmother, Marie-Louise Moriset, and has been carefully preserved within the family. The terroir is pure chalk, and the wine is vinified entirely in 600-liter demi-muids before transfer to bottle under cork, where it rests on the lees. This 2026 release is the same 2021 base as the previous release, held an additional year before disgorgement — part of Bougy's ongoing experiment with how her wines evolve with extended time on the lees. No dosage.

Ripe pear and wildflower honey on the nose, followed by a layered, saline palate with real mineral depth. The finish is long and refreshing, drawn taut by the pure chalk of Mesnil.
