Elise Bougy is part of a new wave of Champagne growers rethinking the region from the ground up. After returning to her native Les Mesneux in 2016 to take over her family’s estate, she transitioned the vineyards to organic and biodynamic farming, earning certification in 2022. Her three hectares span 1er Cru parcels in the Montagne de Reims and a prized Grand Cru plot in Le Mesnil-sur-Oger, including a cherished family holding on pure chalk soils. With minimal intervention in the cellar and a fierce devotion to site expression, Bougy crafts Champagnes that are vibrant, tense, and resolutely alive.


Les Coullemets is a new release from Elise Bougy, sourced from a low-yielding, chalk-rich parcel of chardonnay at the base of Le Mesnil-sur-Oger that was once farmed by her grandmother, Marie-Louise Moriset. This Grand Cru site, with its pure chalk soils and cool exposure, delivers the tension and mineral depth for which the village is revered. Fermented with native yeasts and aged 15 months in 600L demi-muids, the wine was bottled under natural cork for extended lees aging, encouraging a slow, gentle oxidation. It was disgorged without dosage and released after a further six months in bottle.


The result is a layered, saline blanc de blancs that evolves on the palate with a fine chalky grip and a long, refreshing finish. Elegant yet deeply grounded, this is a striking new expression of Mesnil from one of Champagne’s most promising voices.
