From high-elevation vineyards on the northern slopes of the Montagne de Reims, he crafts wines that are textured, mineral, and quietly expressive of place.
Les Blancs Fossés is a rare Coteaux Champenois Rouge from 50-year-old pinot noir vines rooted in Campanian chalk and clay in Verzenay. The wine underwent a gentle one-week maceration, followed by fermentation and aging in neutral barrique, preserving the purity of the site while allowing for a quiet layering of texture. Malolactic fermentation occurred naturally, and the wine was bottled with minimal intervention.
The result is a taut and finely etched pinot noir, with lifted aromatics of red cherry, chalk dust, and crushed rose, and a palate that balances savory tension with delicate fruit and spice. This is Champagne’s still (but not quiet!) red side showing a wine that is elegant, precise, and deeply grounded in terroir.
