The Burgundian winemaking history of la famille Carillon dates back to 1520. Jacques Carillion continues that legacy on his 5.5 hectares (primarily in Puligny Montrachet), using approximately the same level of technology that his ancestors used. Ploughing and harvest are done by hand, no herbicides are utilized, and merciless debudding and pruning are enacted. The resulting wines are sophisticated, classic and age-worthy, offering finesse and nuanced terroir expression.
Les Perrières, sourced from half a hectare of 40-year-old premier cru vines, is among the most vivid of Jacques’s famously restrained wines, grounded by the influence of his signature intricate minerality. White peach, cedar, and white pepper on the nose, with a hint of linden blossom. On the palate, bosc pear, nectarine, lemon zest, and hazelnut. A marvel now, though you could also cellar for 5-8 years if you wish.
