Aurélien Revillot is a Burgundian by birth. Though his family didn’t make wine, he caught the wine bug early. He pursued studies in winemaking in Dijon during which time he interned around Burgundy, Oregon, and Alsace, even working the 2007 vintage with Domaine Romanee Conti. He went on to work for Domaine Drouhin in Oregon and Newton Johnson in South Africa. When he returned to France in 2009, opportunities in the Loire Valley pulled him to the region. He landed in the vines and cellar of Domaine de la Chevalerie, a benchmark in Bourgueil, and at 32-years-old was able to take a few hectares of vines within the same appellation to work himself. In his vines, Aurélien practices organic and biodynamic farming with natural tisanes to protect or stimulate the vines as they need. Many think of Bourgueil wines as being sturdy and structured but Aurelien makes wines of a supple, floral elegance with a crystalline transparency of terroir.


Grand Mont comes from a .4 hectare plot of cabernet franc vines planted in the 1980s on a plateau of clay-limestone soil with white and yellow limestone veins and a Turonian limestone bedrock. The grapes are carefully hand harvested and destemmed before an ambient yeast fermentation and maceration with minimal pumpovers. It ages for 8 months in used barrels and an additional 7 months in tank. No sulfur is added during vinification and only a small amount is added at bottling.
