“Pataille is proof that major Burgundy can come from a minor address,” Jancis Robinson has written of the humble village of Marsannay. Sylvain Pataille’s father, a bus driver by trade, spent his free time helping in a friend’s vineyards, and an uncle owned an estate in Bordeaux that the family visited every summer. Even as a child, Sylvain knew he belonged among the vines. He started with a single hectare in 1999 and slowly built the domaine to 15, farming organically since 2008 with biodynamic methods and consulting as an oenologist across the region. Along the way he turned single-site aligoté into one of the most talked-about categories in Burgundy.

His Fleur de Pinot rosé comes from pinot noir and pinot beurot planted between 1932 and 1949 across three parcels: limestone at Charme aux Prêtres, clay at Champforeys, and pinot beurot at En Blungey. He ploughs these old vines by horse, keeps yields minuscule, and models the wine on the ageworthy rosés of Château Simone and Champagne.

Between 40 and 50% of the fruit is pressed directly and the rest given a short maceration, all fermented with indigenous yeasts, blended, and aged 18 to 24 months in foudre and demi-muids. The result is a rosé with the weight and grip of a white wine, offering redcurrant, blood orange, and rose petal over a chalky, saline core.
