We come together around the idea of saying “yes”: A small word that contains everything.

Chanterêves is the micro négociant project based in the Hautes Côtes of husband-wife team Tomoko Kuriyama and Guillaume Bott. Both studied oenology and Tomoko apprenticed with several notable winemakers in Germany while Guillaume came up in Burgundy. They met during harvest at Simon Bize (where Guillaume is the cellar master) and their wine making philosophy was so similar that it seemed predestined that they would go on to form their own project. They make wines by infusion instead of extraction. “We both like purity and elegance,” Ms. Kuriyama says. “We don’t like massive wines.” The fruit is left as intact as possible and submerged just barely beneath the juice as though making a tea. The resulting wines are light and ephemeral with subtlety and a quiet grace. The Feiring Line says of wines of infusion “everything is there, but it washes over you like a breeze instead of a heat blast.”

2020 Domaine Chanterêves, Savigny-lès-Beaune, Dessus de Montchenevoy, Burgundy, France is situated above the renowned Savigny 1er Cru, Aux Guettes. It faces west 350m up the slope and is essentially a meadow in a forest. The altitude and forest air help moderate the climate resulting in long ripening periods and grapes of great complexity and bright acidity. This wine has mild tannins, a juicy and supple fruit of strawberry compote, raspberries, red cherries, and a gorgeous floral aroma of roses, violets, and black lillies. A playful, beautiful wine with enough of a brooding edge to hold fascination.
