We come together around the idea of saying “yes”: A small word that contains everything.

German-born Bastian Wolber is a citizen of the wine world, with a path that’s taken him from Baden to the Mosel, Alsace, Jura, and now Burgundy. A skateboard accident during harvest with Jean-François Ganevat in 2019 might have ended the journey for most, but Bastian turned it into the start of something entirely his own. He launched Laisse Tomber—meaning “let it fall”—as a micro-négoce project using organic grapes from friends across Alsace, Baden, and Burgundy, vinifying with a light touch and zero pretense.

Today, he lives in Volnay, where he shares a cellar above Pousse d’Or and works full-time with Jean-Yves Bizot. He now farms 1.3 hectares of his own vines, while continuing to make wines under the Laisse Tomber label. Everything is done with native yeasts, whole clusters, minimal sulfur, and a feel-first approach shaped by instinct and trust in place. The wines are expressive and precise, shaped by a joyous resolve and an unwavering sense of exploration.

Mont Poulain is Bastian Wolber’s take on Coteaux Bourguignons, a regional appellation that allows for blending across varieties and broader zones, though this cuvée is 100 percent pinot noir from heavier red clay soils in Pommard. The fruit was farmed organically and harvested by hand, then vinified with 100 percent whole clusters in closed oak vats or stainless steel. A few clusters were gently crushed to start fermentation with a pied de cuve, followed by a two-week semi-carbonic maceration. Extraction was minimal, limited to a few foot treads and gentle cap-wetting near the end of fermentation. Malolactic conversion finished during a third week in tank before pressing.

As with all of Wolber’s wines, fermentation was carried out with native yeasts and aging took place in old Burgundy barrels (228L and 350L) for 18 months. After a short rest in tank, the wine was bottled without fining or filtration and with just 10 ppm of sulfur. Mont Poulain is bright, supple, and deeply aromatic, offering red fruit, violet, and spice in a frame that feels lifted and light on its feet, yet grounded by clarity and intent. This is the kind of wine that reminds you how much charm and character can be coaxed from thoughtful farming and a light touch in the cellar.
