We come together around the idea of saying “yes”: A small word that contains everything.

Established three generations ago and now under the direction of visionary Sandrine Caloz, Cave Caloz makes exceptional low-intervention wine in the Valais. They steward six acres with a biodiversity-centered philosophy called “Production Intégrée.” Native birds, wildflowers, vine peach, and fifty grazing sheep call this land home. William Blake himself could not have conjured such pastoral bliss.

The wines are harmonious and enchanting as the site. Les Bernunes in particular—made with what’s called heïda in the Upper Valais, païen in the French-speaking Valais, and savagnin in the Jura—is a treat for those who love Château Chalon and Vin Jaune, not because of the similarities, but because it offers a window into the range this grape is capable of. Rather than savagnin’s better-known oxidative notes, Les Bernunes has notes of crisp ripe pear, marzipan, honeydew melon, and a brisk morning walk in a pine forest. Whether you’re already initiated into the world of Swiss wine or not, this is a compelling peek into the singular beauty of this region’s viticulture.
