We come together around the idea of saying “yes”: A small word that contains everything.


In Champagne, where legacy often precedes identity, Hélène Charbaut is forging something beautifully personal. The fourth generation to farm her family’s vines in the Grande Vallée de la Marne, she returned home in 2020 after formative years spent studying in Burgundy and working with Champagne producers Leclerc Briant and Péhu Simmonet. Armed with a clear-eyed vision and deep reverence for the land, she marked her debut with a trio of single-variety, single-vineyard Champagnes that shimmered with intention. La Charbauterie is her first multi-parcel blend—a cuvée that gathers the threads of her story and ties them into a singular, striking expression. 




Drawn from old vines planted in the 1960s across Mareuil-sur-Aÿ, Avenay Val d’Or, and Bisseuil—three premier cru villages rooted in clay-limestone soils—La Charbauterie is composed of equal parts chardonnay, pinot noir, and pinot meunier. Fermentation takes place in small oak barrels, including 35% reserve wine from 2021, aged in both 2.28hL casks and a 25hL oak “tuna” barrel. The wine sees 24 months sur lattes and is bottled unfiltered, with dosage adjusted individually for each vintage. 




True to Hélène’s farming ethos, the vineyards are tended organically and biodynamically, with biodiversity nourished by a shared flock of grazing sheep—an initiative she helped pioneer. Her cellar work is minimalist, guided by trust in fruit, site, and time. La Charbauterie reflects this vision: textured and complete, with a supple core and fine mineral line, it’s a Champagne that speaks not of artifice, but of origin and care.  


This wine is a pre-arrival with an estimated ship date of late May. Your wines will ship as weather permits and the daily range is consistently between 45 and 74 degrees. Please note pre-arrival sales are non-refundable as suppliers require us to make binding commitments and deposits to secure the wine.
