The wines are fermented with native yeasts in Burgundian barrels, aged on the lees for extended periods, and finished with minimal dosage.\u003c\/p\u003e\n\u003cp\u003eLes Pierrières was Collin’s first wine and still anchors the range. The 1.2-hectare monopole sits in Congy, with chardonnay vines over forty years old on thin, poor topsoil above soft Campanian chalk shot through with carbonated silex — black flint — a geological rarity specific to the Coteaux du Petit Morin.
