The holdings are small but enviable: premier cru parcels in Chigny and Ludes, and a grand cru parcel in Ambonnay, all gentle southeast-facing slopes at around 150 meters where chalk bedrock alternates with clay and calcareous sand. Organic conversion began in 2009, with certification following in 2012. Their son Olivier joined in 2019 and has deepened the estate's commitment to biodiversity through agroforestry. In the cellar, fermentations unfold naturally in old 228-liter French oak barrels, at least fifteen years old, chosen to refine the wine without imposing wood character. A 5,000-liter solera foudre, topped continuously with new wine since the estate's founding, threads through every cuvée.\u003c\/p\u003e\n\u003cp\u003eCuvée Unique draws from all of the Mazets' parcels. Meunier leads the assemblage, with chardonnay, pinot noir, and pinot blanc in supporting roles. Sixty percent comes from the vintage harvest, the remaining forty percent from the solera foudre. After fermentation and aging in barrel, the wine rests seven years on its lees before disgorgement. It has a sibling in Nature: the two share the same parcels and grape proportions but come from different vintage bases. If the wine calls for dosage, it becomes Unique; if it needs none, it is released as Nature. Only one of the two is made in any given year.\u003c\/p\u003e\n\u003cp\u003eMineral and gently bitter, with fine persistent mousse and a creamy texture that carries more than four decades of solera complexity.
