His father John kept a hobby vineyard at the family home in Dorset, a modest thing, more pastime than ambition. It stayed with Justin, and in time he set out to turn a pastime into a vocation.\u003c\/p\u003e\n\u003cp\u003eIn 2009, after studying viticulture at Plumpton College and traveling through many of the world’s great wine regions, Justin planted the first blocks of chardonnay, pinot noir and pinot meunier at Crawthorne Farm, north of Dorchester, on a site whose soils of clay and flint over Kimmeridgian and Portlandian limestone connected it, in geological terms, to the chalk of Champagne’s Côte des Blancs. The estate now covers 34 hectares on those same south-facing slopes, and the winemaking has been led since 2019 by Tommy Grimshaw, who became head winemaker here at twenty-four after starting as an assistant to Daniel Ham. By 2017 the estate had committed to an approach still rare in English sparkling wine: indigenous yeasts for both fermentations, no enzymes, no fining, no filtration, and a reserve wine held partially under flor. Grimshaw has carried that style forward and refined it, all in the service of wines that taste of their place more than of a winemaking process. Jancis Robinson compared the style to Selosse. The IWSC named Langham Sparkling Wine Producer of the Year in both 2020 and 2025.\u003c\/p\u003e\n\u003cp\u003eThe Blanc de Blancs is all chardonnay, drawn from the estate's ripest, most complex parcels on the Crawthorne chalk. The grapes are whole-bunch pressed and the base wine ferments on indigenous yeasts in a mix of used French oak and stainless steel, going through full malolactic across eight to nine months of élevage before the wine rests a minimum of three years on the lees. Dosage sits at just 1.5 grams. Gooseberry, poached pear and toasted hazelnut lead, then the nose turns savory: oyster shell, grilled brioche, a hint of bitter almond. The palate follows, sinuous, saline, chalky and long.
