Their project, A Pie de Tierra, grew from that friendship and from a belief that this rugged mountain terrain west of Madrid was capable of something special.\u003c\/p\u003e\n\u003cp\u003eRonca de Mazalbam comes from a single hectare of 50-year-old garnacha in the Méntrida zone that has been in David's family for generations. The vineyard sits on sandy, silty soils with a south-facing slope, cooled by a stream that runs along its edge. Around 800 bottles produced. The grapes are fermented whole cluster using indigenous yeasts, then aged eight to ten months in a 500-liter French oak barrel and Galician chestnut foudre.\u003c\/p\u003e\n\u003cp\u003eIn the glass, the wine is pale and translucent in the way that the best Gredos garnacha tends to be. Rose petal, wild strawberry, a thread of dried rosemary and iron-tinged earth. The palate is weightless but not thin, with fine tannins, cool granite minerality, and a finish that stretches well beyond what the body suggests.
