Long before German pinot noir had an international audience, Paul was trading notes with growers in Burgundy, Oregon, and Switzerland's Bündner Herrschaft, and Jancis Robinson would later call him “an acknowledged Pinot magician in Germany.” His son Sebastian trained at Geisenheim and in Burgundy, joined in 2007, and has run the 21-hectare estate with his wife Isabell since 2018; father and son have each been named German Winemaker of the Year. The vines grow on Buntsandstein, an iron-rich red sandstone laid down some 250 million years ago that holds the day's heat into the night, and they are farmed organically without certification and fed with compost made on the estate. In the cellar, fermentations run on indigenous yeasts in open-top vats, and every red is bottled without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eThe Bürgstadter Berg is the hillside above the village that cradles both of Bürgstadt's grand crus, Centgrafenberg and Hundsrück, and Fürst's Erste Lage is drawn exclusively from its own plots within those two sites. The Berg reaches into the valley of the Erf, a small tributary that runs cooler than the Main, and the Fürsts led the local campaign that made it the first vineyard in Germany with its own EU protected designation of origin. The 7.3 hectares behind this wine were planted between 1975 and 2010. Fermentation includes 30 to 65 percent whole clusters, followed by 16 to 18 months in barrels, 15 to 25 percent of them new, and the Wine Advocate scored the 2023 at 94 points.\u003c\/p\u003e\n\u003cp\u003eWild cherry and raspberry lead, with violet, cracked black pepper, and a savory note of forest floor. The palate is dense and fine-grained, with palpable energy beneath the fruit and a long, steady finish.
