His philosophy was singular from the start: single vineyard, single variety, single vintage, zero dosage. Every wine is made from first-press juice only, fermented with indigenous yeasts, and undergoes a long, slow, cool second fermentation that produces finer bubbles and enhances the vinosity of the base wine. He farms organically and restricts yields to among the lowest in Champagne.

Val Vilaine is a 1.5-hectare lieu-dit near the commune of Polisy, planted with pinot noir by Cédric's father in 1974. The vines, now over fifty years old, grow on bands of Kimmeridgian limestone and produce roughly 300 to 500 cases annually. The wine spends approximately fifteen months on the lees before disgorgement and is bottled at lower pressure than typical Champagne, around 4.25 atmospheres rather than the standard six, giving a softer, more integrated mousse.

The 2023 base is vibrant and youthful. Strawberry, red cherry, fresh chamomile, and a chalky limestone backbone that runs the length of the wine. Champagne stripped back to its essentials — place, grape, and conviction.

//cdn.shopify.com/s/files/1/0779/1794/6152/files/RosesdeJeanne_CedricBouchard_ValdeVilaine.jpg?v=1775587405
https://yes-society.com/products/2023-roses-de-jeanne-cedric-bouchard-val-de-vilaine-champagne-france
