He apprenticed in Baden and went on to Geisenheim. Karoline Linka came to wine by way of hotel school and the dining rooms of starred restaurants before leaving hospitality to study international wine business, also at Geisenheim, where the two met. It took several years and a season together in Burgundy before the spark caught. Between them, they had more than a decade in organic and biodynamic estates, the wine trade and restaurants when they founded Makalié in 2019 in Müllheim, in the Markgräflerland at the southern tip of Baden, six kilometers from the French border. The name joins maka, a word for earth, with the French lié, bound, and folds in their own names besides. They farm biodynamically without certification, see themselves as observers and companions to the vines rather than their masters, and make a small range of pinot noir, gutedel, weissburgunder and chardonnay, along with a pétillant-naturel cider, all of it bottled without fining or filtration and with sulfur measured in single digits.\u003c\/p\u003e\n\u003cp\u003eThe Spätburgunder is Makalié's portrait of the region, a blend of five sites planted between 1980 and 2000 with both German and French clones of pinot noir. Three of the sites are in the Markgräflerland on loess-loam, one is a cool, east-facing parcel at Bahlingen on the Kaiserstuhl's volcanic clay and loess, and one is the Bleuwen vineyard on the Römerberg above Badenweiler, a thin layer of clay over Jurassic limestone and calcareous marl at 400 meters where the vines give way to the forest. Half the fruit went in as whole clusters for a two-to-three-week fermentation in tank with minimal extraction and a single foot punch-down before pressing. The wine aged eleven months in used Burgundian barrels and was bottled without fining or filtration, with five to ten parts per million of sulfur added just before bottling.\u003c\/p\u003e\n\u003cp\u003eThe 2023 season in Baden was warm through summer with rain arriving around harvest, and the higher, cooler sites in this blend held the wine's freshness. Sour cherry and cranberry lead, then raspberry, rose hip and a scattering of pink peppercorn over forest floor.
