The modern domaine dates to 1919, when François Bouley took charge of the family vines. Christian followed in 1948, and Jean-Marc created his own estate in 1974, folding his father's vineyards into it a decade later and moving to bottling the entire production himself. Thomas Bouley made the 2000 vintage at eighteen while his father was ill, took a decisive role in the vineyards from 2002 and has run the domaine outright since 2012, the fourth generation in the cellar and the vines at once. His eight and a half hectares are divided into twenty-nine parcels. There are no herbicides or chemical fertilizers, the soils are plowed, the vines are pruned Guyot-Poussard with raised canopies and minimal hedging, and each plant carries only five or six bunches. In the cellar he uses a portion of whole clusters, ferments two to three weeks with indigenous yeasts, ages fifteen to twenty months in barrel with new oak held to a third at most, and bottles without fining or filtration. Thomas is now counted among the growers who have made Volnay one of the most compelling addresses in the Côte de Beaune.\u003c\/p\u003e\n\u003cp\u003eThe village Volnay comes from five parcels totaling two hectares, spread from the bottom of the slope to the top and all facing southeast, on the deep clay-limestone that gives the appellation its silk. The vines average around twenty-five years. Fermentation runs fifteen to twenty days in open vats, and the wine ages eighteen months in barrel with a quarter new oak.\u003c\/p\u003e\n\u003cp\u003eThe 2023 vintage in Burgundy was warm and generous, with a big, healthy crop. Thomas's low bunch counts kept concentration high where others were managing volume. This is Volnay in its perfumed register: red cherry and raspberry, violet and rose, a twist of blood orange and a dusting of allspice.
