In 2010, he and his partner Carlos de Carlos began planning a project of their own. Francisco’s great-grandparents had migrated from Switzerland to the Traiguén area in the late 19th century, and he had long believed this cool, rainy corner of southern Chile, 650 kilometers south of Santiago, could produce exceptional pinot noir and chardonnay. They planted their vineyard, Los Suizos, in 2013 on volcanic soils between the Quino and Traiguén rivers. The first vintages arrived in 2018 and 2019, and quickly confirmed the intuition. Today the estate is dry-farmed, hand-harvested, fermented with indigenous yeasts, and aged in French oak. The wines are among the most compelling expressions of cool-climate Chile.\u003c\/p\u003e\n\u003cp\u003eLos Padrinos represents a newer chapter: cabernet sauvignon from the Maule, Chile's largest and most storied wine region. The cabernet drew Baettig south of Cauquenes, to Coronel de Maule in the foothills of the Coastal Range, where he found something increasingly rare in Chile. Centenarian País vines, head-pruned and dry-farmed, onto which cabernet sauvignon had been gradually grafted since the 1970s and 1980s. The old País roots reach deep into granitic, iron-rich soils, producing limited yields of concentrated fruit. When the grower faced the prospect of selling the land to developers, Baettig and de Carlos purchased five hectares outright, saving the vines. All work is done by hand, with only sulfur and organic treatments in the vineyard.\u003c\/p\u003e\n\u003cp\u003eThe fruit is fully destemmed, fermented at cool temperatures with indigenous yeasts, and extracted gently to manage the natural concentration of the old-vine fruit. The wine ages 15 months in French oak barrels. Baettig compares the tannin profile to Saint-Estèphe: gravelly, firm, with real grip. In the glass, concentrated cassis and blackberry are layered with tea leaf, black pepper, dried herbs, and a thread of dark chocolate. The acidity is bright, sharpening the structure.
