Each generation added land: Matthew Argyros tripled the vineyard after 1950, and his son Yiannis, who took over in 1974, expanded it again while proving that dry assyrtiko could age and that Vinsanto belonged among the great sweet wines of the world. Today Yiannis's son Matthew, the fourth generation, runs the estate from a gravity-fed winery completed in 2015 and farms more than 120 hectares, the largest private vineyard holding on the island. The vines are ungrafted, since phylloxera has never survived in Santorini's clay-free volcanic ash, and they are trained low in the traditional kouloura basket that shields the fruit from the Aegean wind. Average vine age exceeds 70 years, and the oldest parcels pass 200.\u003c\/p\u003e\n\u003cp\u003eEvdemon means \"good spirit,\" and the cuvée draws on the estate's two oldest vineyards, in Pyrgos and Megalochori, where the vines, farmed biodynamically, are between 150 and 200 years old. The fruit is fermented in stainless steel, after which a quarter of the wine is moved into old 500-liter barrels for a year while the remainder stays in tank. The two parts are then reassembled and left on their fine lees in stainless steel for a total of 30 months before bottling without filtration.\u003c\/p\u003e\n\u003cp\u003eThe nose opens slowly: lemon cream, beeswax, licorice, a trace of Madagascar vanilla and pie crust from the oak, then white peach and lime blossom underneath. The palate is broad and creamy through the middle, held by high acidity and a salted-stone finish that runs long. The Wine Advocate awarded it 97 points and called it a star of its Greek report.
