The vineyards, planted and replanted by family hands over generations, are cultivated without synthetic interference, fertilized only by organic compost. Biodynamic rhythms guide both the vineyard and the cellar, where each vintage follows the phases of the moon, creating wines that are at once vibrant and timeless.\u003c\/p\u003e\n\u003cp\u003eIn white, that listening took the form of a project: beginning with Les Romains in 1997, the family started bottling individual parcels on their own, on the rationale that a Sancerre vineyard could be championed the way a Burgundian champions its climat. Lieu Dit, new with the 2022 vintage, inverts the logic. Rather than isolate one named site, it assembles several: Les Romains brings silex and a south face, Guigne-Chèvres a thin chalk soil that looks north, Le Pavé an eastern exposure, and the vines across the three run past forty years. Each face of the hill ripens on its own clock, and the blend carries a range of pitch that no single parcel holds alone. Fermentation runs on indigenous yeasts, with an extended stay on the lees before bottling.\u003c\/p\u003e\n\u003cp\u003eRipe apple and lemon rind, elderflower, the brioche-crust note that comes from the lees, and flint underneath all of it. The summer was hot and dry until rain arrived just before an early September harvest, and the wine carries that generosity: wide across the palate, gentler in acidity than the house is known for, finishing dry and stony.
