That forest cools the site in summer, warms it in winter, and returns organic matter to the soil through fallen leaves, while the south and southeast exposures capture the warmth characteristic of Fleury and the elevation holds onto a cool, mineral precision. From this parcel Gamet produces one of Champagne's rarer expressions: a still rosé under the Coteaux Champenois appellation, fermented with indigenous yeasts and given a 40-hour cold maceration followed by eight days of berry infusion under a floating cap. Twelve months in oak tonneaux precede bottling.\u003c\/p\u003e\n\u003cp\u003e2022 brought warmth and generous ripeness across the Marne Valley, and Clos du Goulot, with its south-facing elevation and forest buffer, is the kind of site that translates a good year into something vivid and precise. The wine pours a deep salmon pink. Notes of wild strawberry and morello cherry at the fore, with pomegranate, a faint smokiness, and orange peel underneath, with the wet-stone mineral signature of the Fleury clay-limestone soils running through it all.
