In 1997, his father opened a magnum of Sassicaia and a bottle of Conterno Fantino Barolo to mark Giacomo's eighteenth. The experience set his course. He studied viticulture and enology at the University of Perugia, then spent years working harvests across the world: Bordeaux, Patagonia, New Zealand, and most formatively, Burgundy, at Domaine de Montille. In 2016 he came home to San Casciano dei Bagni, the tiny village in the Provincia di Siena famous since antiquity for its thermal hot springs. In 2009, he and his father had planted the first vines in the Bossolo vineyard, a 0.55-hectare plot at 515 meters on the western slopes of Monte Cetona, a solitary limestone mountain halfway between Rome and Florence. The vineyard was replanted entirely to sangiovese in 2017.\u003c\/p\u003e\n\u003cp\u003eThe site is extraordinary. The thermal springs below create a protective microclimate, with warm water vapor shielding the vines from frost and hail. The vineyard faces northwest, with long sun exposure during the growing season, on clay-silt soils rich in limestone. Giacomo works six hectares total around the mountain, with additional sangiovese vineyards at Pozzone and Caccialupi on the eastern face, and chardonnay and grechetto on the western slopes. All parcels are managed by hand with spontaneous cover crops, treatments limited to copper and sulfur, and yields of roughly one to 1.3 kilograms per vine.\u003c\/p\u003e\n\u003cp\u003eIl Bossolo is 100% sangiovese from four clones planted via massal selection. For the 2021, 25 to 30 percent is fermented whole cluster, using indigenous yeasts. The wine ages two years in barriques and tonneaux, then four months in stainless steel and at least twelve months in bottle.\u003c\/p\u003e\n\u003cp\u003eThis is high-altitude sangiovese with a character Giacomo describes as somewhere between Chianti Classico and Burgundy pinot noir. Cherry, red currant, and a thread of citrus on the nose, with fine floral notes and a mineral edge from the limestone. The palate is delicate and taut, with bright acidity and fine-grained tannins.
