Jean chose the other path. Following the chemist and vigneron Jules Chauvet, he returned to the old ways: old vines, no synthetic herbicides or pesticides, late harvesting, rigorous sorting, whole clusters fermented slowly with indigenous yeasts in the semi-carbonic manner, and little or no sulfur. Three friends in Morgon went the same way, Marcel Lapierre, Jean-Paul Thévenet and Guy Breton, and Kermit Lynch, who imported them all, christened the group the Gang of Four. The name stuck, and so did the method, which has since reshaped the whole region. The domaine today covers 8.6 hectares, most of it on the Côte du Py, with vines from ten to ninety years old, certified organic, and the wines are aged in used Burgundy barrels before bottling. Jean's son Alex now works alongside him.\u003c\/p\u003e\n\u003cp\u003eThe Côte du Py has become perhaps the single most sought-after bottle in Beaujolais, and it is still made the way it was in 1980. The Côte du Py is the old volcanic hill that rises just outside Villié-Morgon, the geographic and symbolic heart of the appellation. Its soil is a crumbling blue-grey schist streaked with granite and manganese, so friable and poor that locals call it roche pourrie, rotten rock, and the vines have to drive deep to find anything. That struggle gives Côte du Py gamay a density, a tannic frame and a stony mineral core found nowhere else in Beaujolais. Foillard's parcels here are the heart of the domaine.\u003c\/p\u003e\n\u003cp\u003eAfter a run of hot vintages, 2021 handed Beaujolais frost in April, rain through summer and a late harvest, and the wine came in at 12.5 percent with none of the sun-drenched weight of the years around it. The wine is all the more Côte du Py for it. Black cherry and plum skin, iron and violet, then black pepper and a whiff of smoke over the stones.
