She has spent the decades since taking over her father's domaine at Magny-lès-Villers narrowing the list of things she is willing to touch. The turn came in the Barossa, as far from Burgundy in method as she could get, where she watched large wineries do high-intervention winemaking better than she believed she ever would. Burgundy's advantage was its history, so she came home and made her work the business of not getting in its way. Sulfur gives her migraines, and roughly four-fifths of what she makes now ferments without it. She farms organically and refuses certification, because the rules permit copper and sulfur sprays she will not put on her soil or on the people who walk her rows.\u003c\/p\u003e\n\u003cp\u003eHer approach in the cellar follows a matched pair of decisions. Where a little sulfur goes into the vat the fruit is destemmed, because she found that sulfur and stems together pull a green edge out of the wine. Where no sulfur goes in the clusters stay whole, and Echezeaux gets the second method. The parcel is Les Rouges du Bas, a third of a hectare at the heart of the grand cru, the soil 60 centimeters deep at the foot and 1.2 meters at the top over a slab of pink limestone. In 2021 the vines were 41 years old, the pinot noir came in at 22 hectoliters per hectare, and the parcel gave 1,038 bottles. It fermented on indigenous yeasts for fifteen days with barely a punch-down, then went by gravity into Allier barrels, every one of them new, and was bottled without filtration.\u003c\/p\u003e\n\u003cp\u003eIt opens with wafts of morello cherry and wild strawberry, with violet and rose ensuing and a turn toward clove and dried porcini.
