We come together around the idea of saying “yes”: A small word that contains everything.

Elise Bougy is one of the new generation of Champagne vignerons—passionate to press against the prevailing dictums of Champagne in search of new ways to make vibrant, expressive wines. She has 3 hectares of 1er cru and grand cru holdings spread between Montagne de Reims and the Côte des Blancs and she farms these organically and biodynamically, and bottles the plots separately, seeking to understand the different terroir expressions of her vineyards. The greatest care is taken in the cycle of farming to harvest to vinification and the wines show this with singular particularity.


This Blancs de Blancs Champagne is from the grand cru village of Le Mesnil-sur-Oger. The vines are planted in pure chalk in a parcel named Chétillon de Haut. The vineyard sits directly across the road from Pierre Péters’s famed Les Chétillons. The fruit for this cuvée ferments natural and undergoes malolactic fermentation before being matured in a mixture of stainless steel tanks and large oak barrels. This wine is multihued with Japanese pear, the thinnest slices of apple, crème fraiche, lemon oil, and the smell of fresh baked bread. A vibrant wave of minerality sweeps through it all.
