For a generation, they sold their fruit to the market rather than bottle under their own name. Georges changed that, returning home after formal training and a period in Bordeaux, first reviving a still red wine from old pinot noir vines and then, from 2014, turning to Champagne with the same seriousness of purpose. He farms a little under five hectares across Bouzy, Ambonnay, Louvois and Tauxières, certified organic, working each parcel on its own: late picking, no chaptalization, low or no dosage, and long bottle aging. These are Champagnes made for depth and unfolding.\u003c\/p\u003e\n\u003cp\u003eLe Mont de Tauxières comes from a single vineyard of that name in Bouzy, planted in 1971 and 1973 with pinot noir and chardonnay in equal measure. The site is entirely within grand cru classified land, on the south-facing limestone and clay slopes that make Bouzy one of the Montagne de Reims' most important villages for pinot — yet that chardonnay gives the wine a structural dimension and a finesse that distinguishes it from Bouzy's broader output.\u003c\/p\u003e\n\u003cp\u003eVinified and aged on its fine lees in barrels ranging from new to four years old, the 2018 underwent malolactic fermentation, was racked once, and was bottled in summer 2019 without fining or filtration at zero dosage, under cork. Just over a thousand bottles were made. The wine pairs Bouzy's gravitas with chardonnay's lift: raspberry and redcurrant, toasted brioche, candied ginger and a long, firm, saline close.
