Richard Fouquet became the estate's fifth-generation custodian in 1996, at twenty-one. He had grown up in the suburbs of Paris, but as a boy he told his grandmother he meant to make Champagne, and when the moment came, he did something close to reckless: he carved three of the family's eight hectares out of the arrangement that sent their fruit to Laurent-Perrier and staked everything on those parcels. They were the right three, grand cru chardonnay on the deep Campanian chalk of Cramant, Chouilly and Oiry, chalk laid down from marine sediment more than seventy million years ago, with a small plot of pinot meunier at Mardeuil across the river. Working alongside his wife Karine, he farms without pesticides or insecticides, treating the vines with herbal teas and essential oils, and keeps production to fewer than 2,500 cases. The wines are chalk-driven, precise, and built to age.\u003c\/p\u003e\n\u003cp\u003eThis blanc de blancs draws on two grand cru chardonnay parcels in Chouilly, chosen for their counterpoint: the bulk from Le Mont Aigu, planted in 1970, and a portion from Les Caurés, planted in 1946, among the oldest vines Guiborat farms. Mont Aigu brings the focused, chalky precision the site is known for; Les Caurés brings depth and texture.\u003c\/p\u003e\n\u003cp\u003eMade from first-press juice and fermented half in stainless steel and half in 400-liter barrels without malolactic, it ages seven months on the lees before five years resting sur latte in the chalk cellars bored beneath Cramant. Disgorgement comes late and the dosage sits barely above zero, leaving the terroir to carry the wine. Lemon, white peach and green apple on the nose, evolving toward toasted hazelnut and a flinty, oyster-shell minerality, with a saline, bone-dry length. Chouilly rendered with rare purity.
