Kagami’s cellar work shows similar restraint: spontaneous fermentation, no sulfur additions, and 4-5 years of aging before bottling. Mizuiro, meaning “pale blue” in Japanese, alludes to the serenity of the Les Saugettes vineyard from which this chardonnay is sourced. One of Domaine des Miroirs' most distinctive and sought-after expressions, the 2016 offers striking precision and an almost glacial, mineral freshness. Notes of white peach, musk melon, acacia honey, and hawthorn blossom, with a silky texture throughout the long finish.
