After training with Thierry Allemand, Bruno Schueller, and at Burgundy's Domaine Comte Georges de Vogüé, Kagami founded his estate in 2011 with help from Jean-François Ganevat, who also served as location scout. His work in the vineyard is no-till, encouraging biodiversity by planting native herbs and flowers among the vines. Kagami’s cellar work shows similar restraint: spontaneous fermentation, no sulfur additions, and 4-5 years of aging before bottling. Production is minuscule at just 10,000 bottles per year, most of which are immediately allocated to Japan.\u003c\/p\u003e\n\u003cp\u003e2016 is widely considered to be one of Kagami’s best vintages in recent memory. Entre Deux Bleus (“between two blues”), one of Kagami's signature savagnin cuvées, is grown on limestone soil between two forested hills. On the nose, aromas of freshly cracked hazelnut, golden apple, and yuzu zest, with salinity and vibrance on the palate.
