Their vision is singular: let time, soil, and the region’s indigenous grapes speak for themselves. Today they farm 72 hectares organically and biodynamically (Demeter-certified since 2014), working Clydesdale horses between vines, and pioneering extended aging from their gravity-flow winery built into the mountain.\u003c\/p\u003e\n\u003cp\u003eEnoteca is their pinnacle cuvée, produced only in exceptional vintages. From 50+ year-old vines rooted in calcareous clay soil on the Font de Jui estate, this 65% xarel·lo, 35% macabeu blend from 2012 aged over 120 months under cork before manual disgorgement. Fewer than 2,000 bottles were produced, each hand-numbered. The wine offers remarkable complexity, with notes of stone fruit, toasted hazelnut, and cocoa. Fine bubbles and steely mineral precision through the dry, persistent finish.
