Mouzon-Leroux is a ninth-generation grower estate in the grand cru village of Verzy, where Sébastien Mouzon has transformed his family’s land into one of Champagne’s most vibrant biodynamic vineyards. Certified Demeter and rooted in a legacy that stretches back to 1776, the domaine farms chardonnay, pinot noir, and the region’s rarer varieties across parcels threaded with silex and chalk. Sébastien has become a pioneer of vitiforestry, planting thousands of trees and hundreds of aromatic plants among the vines to create a living, diverse ecosystem. In the cellar he works with gentle intent, using natural fermentations, minimal sulfur, and long aging to preserve the energy and mineral clarity of each site. The resulting Champagnes are soulful and expressive, wines that open gradually in the glass and offer a true sense of place.
Les Fervins stands apart in this lineup as one of the most uncommon cuvées produced anywhere in Champagne. It is made from all seven of the region’s historic grape varieties in equal proportion, drawn entirely from a single sector of Verzy where chalk lies just a meter below the surface and silex threads through the soil. This is the parcel where Sébastien began his earliest vitiforestry plantings, and the vines themselves reflect that layered history: chardonnay more than seventy years old, pinot noir in its mid-thirties, and the remaining rare varieties planted in 2013 and 2014. Fermentation is spontaneous, followed by eight months in used barrels and nearly four years sur lattes before disgorgement at 1 g/L.
The result is an electric Champagne, grounded by the different voices of arbanne, petit meslier, meunier, chardonnay, pinot blanc, pinot gris, and pinot noir. Citrus oil, white pepper, herbs, and chalk rise first, followed by a mineral drive that carries the wine with real intensity. True to its name, Les Fervins has a kind of singular vibrancy at its core, offering a rare view of Verzy through the full spectrum of its indigenous grapes. It drinks beautifully now for those drawn to detail and lift, and it promises even more nuance with time.
